Interview with Eric Trichard, deputy cellar Master of Perrier-Jouët

Pernod Ricard Korea's champagne brand, Perrier-Jouët, which crafts nature into art, is launching ‘Perrier-Jouët Blanc de Blancs’ and ‘Perrier-Jouët Belle Epoque Blanc de Blancs 2012 Vintage’. Made with 100% premium Chardonnay, the cuvée boasts enticing notes and exceptional aromas.

Since its foundation in 1811, Perrier-Jouët has offered champagne expressing delicate floral aromas with Chardonnay as its signature grape variety. The champagne house Perrier-Jouët, which values quality, maintains a minimum aging period of three years, which is twice the typical champagne aging standard.

Perrier-Jouët Blanc de Blancs, which embodies the purity of Perrier-Jouët Chardonnay, is a non-vintage cuvée made with 100% Chardonnay, a premium white grape variety, offering a bright and fresh flavor like morning dew.

Along with Perrier-Jouët Blanc de Blancs, the newly introduced Perrier-Jouët Belle Epoque Blanc de Blancs 2012 is also made with 100% premium Chardonnay and called the yellow diamond of luxury champagne for its brilliance and rarity like an artwork.
 
In particular, Perrier-Jouët Belle Epoque Blanc de Blancs 2012 is the most floral and elegant one among Perrier-Jouët's vintage cuvées, and it is the quintessence of Perrier-Jouët’s artistry and the purity of prestige Chardonnay. It reveals the enticing and powerful floral aromas of acacia, lilac, elderberry, and raspberry flowers, and the complex flavor of honey, lemon, pickled pears, vanilla, hazelnut, and brioche brings silkiness in the mouth, with a lingering, elegant finish.

To celebrating these two new, ‘Perrier-Jouët Blanc de Blancs’ and ‘Perrier-Jouët Belle Epoque Blanc de Blancs 2012 Vintage’, Eric Trichard, deputy cellar Master of Perrier-Jouët visits to Korea  

The following are questions and answers with him

 

Question: Most Korean consumers are not quite familiar with the job of cellar master. Could you please explain about the cellar master’s roles in detail?  
Answer:
The deputy Cellar Master is the right hand of the head winemaker, the person that “makes” the wine. In Champagne, this role is critical because the Cellar Master is responsible of the blending and ensuring the unique style of each House. The deputy coordinates with the rest of the team the champagne making process  

At Perrier-Jouët, we have only had 8 Cellar Masters since 1811, each of them transmitting the unique floral and intricate style of the House and the chardonnay signature.

As Deputy Cellar Master, I work side by side with Séverine Frerson, Cellar Master, being part of the tasting committee and assisting her in the creation of each year’s wines. 

A Cellar Master is also the main Ambassador for a House, and as Deputy Cellar Master, I have the honor of representing Perrier-Jouët, its unique style and savoir, and of course meet our customers all over the world. 


Q: As Perrier-Jouët is the world's top brand, you must be so proud of being the deputy cellar master of Perrier-Jouët. What is the most attractive part as a cellar master? 
A:
Perrier-Jouët truly is a unique House. 
First, the House’s wine style is very unique, centered around chardonnay bringing a strong yet elegant florality and a unique texture. 

Also Perrier-Jouët owns some of the most beautiful vineyard of Champagne, especially in the Côte des Blancs, where we source the best Grand Cru chardonnays. 

Being Deputy Cellar Master of Perrier-Jouët since 1990, I have also had the chance to witness the consistency and legacy of the House. 

Q: What is the purpose of your visit to Korea at this time and what's the schedule you're looking forward to the most? 
A:
This is indeed my first time in Korea. I am very grateful to be here. I am in Korea today to celebrate the unveiling of Perrier-Jouët Blanc de blancs and Perrier-Jouët Belle Epoque Blanc de Blancs 2012 Vintage’ in Korea. 

This is a very important moment for us, Perrier-Jouët is the Grande Maison of Chardonnay, so launching this 100% chardonnay cuvée is always an event!

To celebrate this new cuvée, we have created a Perrier-Jouët pop-up store at the Hyundai Seoul, where this champagne will be offered. Also Perrier-Jouët is hosting a gala dinner at Pierre Gagnaire Seoul to celebrate the launch of Perrier-Jouët Blanc de Blancs.

And of course, I will take the opportunity to be in Korea to meet with all the Perrier-Jouët lovers here!!

Q: Could please tell us the attractiveness of Perrier-Jouët Blanc de Blancs? 
A:
Perrier-Jouët Blanc de blancs is the embodiment of the Perrier-Jouët style. Since its foundation in 1811, the House has elected chardonnay as its signature grape variety. So this 100% chardonnay champagne represents the essence of chardonnay: florality, freshness, delicacy and tension.

This cuvée is the perfect wine for an aperitif and a meal. Crafted from around 15 villages of Champagne, this wine has aged for over 3 years in our cellars, bringing complexity and depth. 

The texture of this wine is also very unique, very delicate, it reminds me of the texture of white fresia, a delicate white flower.

Q: Could you please tell the difference between Perrier-Jouët Blanc de Blancs Non-vintage and Perrier-Jouët Belle Epoque Blanc de Blancs? 
A:
Perrier-Jouët Blanc de blancs is a non-vintage champagne, blended from wines of different years. Whereas Perrier-Jouët Belle Epoque Blanc de blancs is a vintage wine, only produced the best years. 

The sourcing of the grapes is also slightly different. For the non-vintage blanc de blancs, we source grape in up to 15 different villages, each of them bringing a new dimension to the wine. 

For Perrier-Jouët Belle Epoque Blanc de blancs, we only source from two historic plots in the Grand Cru village of Cramant.  So this wine is the purest and rarest of the collection.

Q: Recently, the interest of Luxury Champagne is getting increased and also the consumption of luxury champagne is also getting higher as well. What do you think is the reason?
A:
I know that Korea is a country of gourmet like France. As such, I heard that the dining culture with champagne as well as the food of Korean consumers is excellent. 

Korea is extremely important for the luxury market. Recently, Korea has received immense attention worldwide with the Korean Wave boom (K-culture). Music, fashion, and entertainment contents are leading trends with great impact not just in Asia, but the world. Korean consumers and the younger generation in particular tend to pursue new and meaningful luxury experiences. 

In other words, Korean luxury consumers don’t simply consume a luxury brand, but also look for resonance with the brand’s story, heritage, and other philosophies and identities about the brand, and that resonance leads to loyalty

Q: Perrier-Jouët brand is known as the most nature-friendly brand ever. Is there any reason for it? 
A:
Maison Perrier-Jouët was founded in 1811 by a young couple, Pierre-Nicolas Perrier and Rose-Adelaïde Jouët. They were united by their love of champagne and nature. Pierre-Nicolas Perrier and his son Charles after him, was a renowned botanist. He wrote several essays about it. So since its very beginning, the House has had a very close connection to nature, a very symbiotic relation that you find today in our wines’ style and our viticultural practices.

Q: As a cellar master of Perrier-Jouët brand, is there anything that you specially care about in grape cultivation and vineyard management for biodiversity?
A:
Nature is an essential element in the creation of champagne and is an endless source of inspiration for Perrier-Jouët. One of my roles is maintaining the Maison's long-standing commitment to sustainability True to this heritage, I want to foster what has been done by our predecessors and preserve our lands and not only adopt new sustainable wine practices but maintain those that we already have in place as we go into the future. With a strong focus on our ecosystems and biodiversity that the founders cherished!


Q: Could you please recommend a particularly good dish with Perrier-Jouët to Korean consumers? 
A:
I would recommend to pair Perrier-Jouët Blanc de blancs with seafood or shellfish. The freshness and iodine of seafood, like oysters, clams, mussels, really matches perfectly with the citrus notes and the delicate white flowers aromas of this wine.


Q: How are you going to make your own mark at Perrier-Jouët, and what your ambitions are for the house?
A:
At Perrier-Jouët since 1990, I have had the honor of working with three different Cellar Masters. Each of them has brought something unique and new to the House, still respecting and ensuring the style transmitted by their predecessors. 

And being in the House for over 30 years, I also got to witness the raising concern the teams have dedicated to nature. There is a long-standing commitment to sustainability. Maison Perrier-Jouët was founded in 1811 by a young couple, Pierre-Nicolas Perrier and Rose-Adelaïde Jouët. They were united by their love of champagne and nature. 

True to this heritage, we want to foster what has been done by our predecessors and preserve our lands and not only adopt new sustainable wine practices, but maintain those that we already have in place as we go into the future. With a strong focus on our ecosystems and biodiversity that the founders cherished!)
