Taipan’s kitchen is headed by Japanese national, Chef Hideshima, whose specialty is creating Chinese delicacies with innovative sauces. “Shanghai is a major city with a population of 25 million people. Its cuisine is one of the Four Great Cuisines of China. The food is often reddish due to its use of rice wine and soy sauce, and when combined with bright green peas and edible flowers creates an edible landscape of spring. I hope that Taipan diners can enjoy the beauty of Shanghai cuisine this way, “ said Chef Hideshima.
